The objective is to assess how the operation functions under real conditions and identify areas requiring alignment, correction, or restructuring. This approach ensures that all recommendations and implementation are based on actual performance—not assumptions.
Engagement
All engagements are delivered on-site within active food and beverage operations. Work is conducted inside real service environments—across kitchen, front-of-house, leadership, and financial performance—to evaluate how the operation functions under actual conditions. This approach ensures that all findings, recommendations, and implementation are based on real execution rather than assumptions or reporting alone.
This phase includes on-site evaluation, operational analysis, and initial alignment across service, labor, and systems. Following this phase, the full scope of work is defined and structured based on operational needs, property size, and overall complexity. Remaining engagement investment is aligned with the defined scope and may include extended implementation, system development, or ongoing support.
Assessment
Each engagement begins with a structured assessment phase.
This phase is conducted on-site and is designed to establish a clear understanding of operational performance, identify areas of misalignment, and define the scope of implementation required.
The assessment may include evaluation of:
• Service flow and execution across outlets
• Labor structure, staffing, and break coverage
• Leadership roles, accountability, and communication
• Financial performance, cost control, and inventory systems
• Menu performance and production processes
• Compliance exposure and operational risk
This phase provides a performance baseline and ensures that all subsequent work is aligned with the specific needs of the operation.
Confidentiality
All engagements are conducted under formal confidentiality and non-disclosure agreements. Operational, financial, and proprietary information is handled with discretion and protected throughout the engagement process.

Scope & Implementation
Following the assessment phase, the full scope of work is defined based on findings.
This may include:
• Extended operational implementation
• Labor and compliance restructuring
• Menu and culinary system development
• Leadership and workforce alignment
• Revenue and programming strategy
The remaining investment is structured based on the defined scope and may include short-term implementation or extended engagement depending on operational needs.
Investment
Investment is structured based on property size, number of outlets, team scale, and overall operational complexity. Rather than applying fixed or standardized pricing, each engagement reflects the realities of the operation and the level of implementation required. All engagements begin with an initial engagement fee, applied toward the total scope of work.
Engagement Fee
The engagement fee represents 25% of the total scope of work and secures the initial on-site assessment and alignment phase.
This phase includes:
• On-site operational evaluation
• Real-time observation during service
• Identification of performance gaps and inefficiencies
• Initial alignment across labor, service, and systems
The engagement fee is applied toward the total investment and ensures that the engagement is structured and aligned before moving into full implementation.
